3-4 pounds pork roast (shoulder or loin)

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 tablespoon Dijon mustard

1 tablespoon honey

2 teaspoons salt

1 teaspoon black pepper

1 medium onion, sliced

4 medium carrots, cut into chunks

4 medium potatoes, quartered

1 cup low-sodium chicken broth

1 tablespoon balsamic vinegar (optional)

Instructions
 

Prep the Pork: Pat the pork roast dry with paper towels. In a small bowl, mix together the minced garlic, chopped rosemary, thyme, parsley, olive oil, Dijon mustard, honey, salt, and black pepper to form a paste. Rub this herb mixture all over the pork roast, making sure to cover all sides.

    Prepare the Vegetables: In the slow cooker, place the sliced onions, carrots, and potatoes as a bed for the pork roast. This will not only add flavor but also keep the roast elevated.

      Add the Pork: Lay the seasoned pork roast on top of the vegetables in the slow cooker.

        Add Broth: Pour the chicken broth around the pork (not directly on top), ensuring the vegetables are covered. If desired, drizzle balsamic vinegar on top for an extra depth of flavor.
