Ingredients

6 bone-in, skin-on chicken thighs

1 cup chicken broth

1/4 cup freshly squeezed lemon juice (about 2 lemons)

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon rosemary, finely chopped

1 teaspoon paprika

Salt and freshly ground black pepper, to taste

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Prep the Chicken: Pat the chicken thighs dry with paper towels. This will help them brown beautifully later. Season both sides generously with salt, pepper, and paprika.

Make the Marinade: In a bowl, whisk together the olive oil, chicken broth, lemon juice, minced garlic, oregano, thyme, rosemary, lemon zest, salt, and pepper.

Layer in the Slow Cooker: Place the seasoned chicken thighs in the slow cooker, skin side up. Pour the marinade mixture over the chicken, ensuring each piece is well coated.

Cook on Low: Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the chicken is cooked through and tender.

Crisp the Skin (optional): For crispy skin, preheat your broiler. Once the chicken is done in the slow cooker, transfer the thighs to a baking sheet, brush with a little olive oil, and place under the broiler for 3-5 minutes, keeping a close watch to avoid burning.

Serve: Once crispy, remove the chicken from the oven. Garnish with freshly chopped parsley and lemon slices. Serve the chicken thighs with your favorite sides, such as roasted vegetables or rice.

Enjoy: Dig in and relish the vibrant flavors of the lemon and herbs!
