Slow Cooker Peach Cobbler

4 cups fresh peaches, peeled and sliced (or 4 cans of sliced peaches, drained)

1 cup granulated sugar, divided

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1 teaspoon almond extract (optional)

Whipped cream or vanilla ice cream for serving

Instructions
 

Prepare the Peaches: If using fresh peaches, peel and slice them into thin wedges. In a large bowl, combine the sliced peaches, 1/2 cup of the sugar, cinnamon, vanilla extract, and lemon juice. Toss until well coated. Set aside.

    Make the Batter: In a separate mixing bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar. Gradually stir in the milk and melted butter until just combined. If using, stir in the almond extract for added flavor.

      Layer Ingredients: Grease the inside of your slow cooker with cooking spray. Pour the batter into the bottom of the slow cooker, spreading it evenly. Gently spoon the peach mixture over the batter. Do not stir; it will bake together during cooking.

        Cook: Cover the slow cooker and cook on low for about 4 to 5 hours, or until the batter is fully cooked and a toothpick inserted into the center comes out clean.

          Serve: Once cooked, turn off the slow cooker and let the cobbler cool for about 15 minutes. Scoop the warm peach cobbler into bowls and serve with a dollop of whipped cream or a scoop of vanilla ice cream on top.
