1 pound (450g) smoked sausage or Italian sausage, sliced

4 medium potatoes, peeled and diced into bite-sized pieces

1 large onion, chopped

2 cloves garlic, minced

1 cup (240ml) chicken or vegetable broth

1 can (15oz) cream of mushroom soup (or homemade, if preferred)

1 cup (240ml) heavy cream or half-and-half

1 cup (100g) shredded cheddar cheese (plus extra for topping)

1 teaspoon dried thyme

1 teaspoon paprika (preferably smoked)

Salt and pepper to taste

1 cup (150g) frozen peas (optional)

Fresh parsley, chopped, for garnish

Prep the Ingredients: Start by peeling and dicing the potatoes, chopping the onion, and mincing the garlic. Slice the sausage into bite-sized pieces.

    Layer the Ingredients: In the slow cooker, layer the diced potatoes, chopped onion, sliced sausage, and minced garlic. If you're using frozen peas, you can add them now or wait until closer to the end of cooking.

      Mix the Sauces: In a separate bowl, whisk together the chicken or vegetable broth, cream of mushroom soup, heavy cream, dried thyme, paprika, salt, and pepper until well combined.
