Smoky Chipotle Lime Sweet Corn Salad

4 ears of fresh sweet corn, husked

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, finely diced

1 small red onion, finely diced

1 jalapeño, finely chopped (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

1/4 cup crumbled feta cheese (optional)

Juice of 2 limes

2 tablespoons olive oil

1 tablespoon adobo sauce (from chipotle peppers)

1 teaspoon smoked paprika

Salt and pepper to taste

Avocado slices for garnish (optional)

Instructions
 

Begin by grilling the corn. Preheat your grill to medium-high. Place the husked corn directly onto the hot grill, turning occasionally, until the kernels are charred and cooked through, about 10-12 minutes. Remove from heat and let it cool slightly.

    While the corn is cooling, prep your vegetables. In a large mixing bowl, combine the black beans, red bell pepper, red onion, jalapeño, and cilantro.

      Once cool, carefully slice the kernels off the grill corn cobs. Add the corn to the mixing bowl with the other vegetables.

        In a small bowl, whisk together the lime juice, olive oil, adobo sauce, smoked paprika, salt, and pepper until well combined.

          Pour the dressing over the salad mixture, gently tossing until everything is evenly coated.

            Taste and adjust the seasoning if necessary. If you like it spicier, feel free to add more adobo sauce or diced jalapeño.

              If using, sprinkle the crumbled feta cheese on top for an added creaminess.

                Serve chilled or at room temperature, garnished with avocado slices if desired.
