Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (milk or dark, as preferred)

1 cup graham cracker crumbs (about 8 full sheets)

1 cup mini marshmallows

1 cup chocolate bar squares (broken into pieces, milk chocolate or dark)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal of the bars.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter with the brown sugar and granulated sugar until light and fluffy. This should take about 2-3 minutes.

Add Wet Ingredients: Add in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined.

Mix in Chocolate and Graham Crackers: Fold in the chocolate chips and graham cracker crumbs gently until evenly distributed throughout the dough.

Add Marshmallows: Gently fold in the mini marshmallows, ensuring they are well mixed but be careful not to overmix.

Spread in Baking Pan: Pour the cookie dough into the prepared baking pan. Spread it evenly with a spatula. Place the broken chocolate bar pieces on top of the dough, pressing them in slightly.

Bake: Bake in the preheated oven for 25-30 minutes or until the edges are light golden brown. The center may seem slightly soft but will firm up as it cools.

Cool and Slice: Allow the cookie bars to cool in the pan on a wire rack for at least 10-15 minutes. Once cool, cut into squares or bars.

Serve: Enjoy your delightful S’more Cookie Bars! You can serve them warm or at room temperature, and for an extra touch, drizzle with melted chocolate or serve with a scoop of vanilla ice cream.
