For the Brownie Layer:

1 cup (2 sticks) unsalted butter

2 cups granulated sugar

1 cup packed brown sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1 teaspoon baking powder

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

For the S’mores Topping:

1 cup mini marshmallows

1 cup crushed graham crackers

1/2 cup chocolate chips

Optional: extra graham cracker pieces and chocolate bars for decoration

Instructions
 

Prepare the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.

    Make the Brownie Layer:

      - In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the granulated sugar and brown sugar until well combined.

        - Add the eggs and vanilla extract, whisking until fully incorporated.

          - In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips.

            - Pour the brownie batter into the prepared springform pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let it cool while you prepare the cheesecake layer.

              Prepare the Cheesecake Layer:

                - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

                  - Gradually add the sugar and continue to beat until combined. Add in the vanilla extract, followed by each egg one at a time, making sure each egg is fully incorporated before adding the next.

                    - Mix in the sour cream until the cheesecake batter is smooth.

                      - Pour the cheesecake batter over the cooled brownie layer in the springform pan, spreading it evenly.

                        Bake the Cheesecake:

                          - Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center still has a slight jiggle. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours or overnight.
