S'mores Cookie Dough Bars – No Baking Required!

Ingredients
  

1 cup graham cracker crumbs

1/2 cup unsweetened cocoa powder

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon salt

1/2 cup mini chocolate chips

1/2 cup mini marshmallows

Extra graham cracker crumbs for topping

Extra chocolate chips and marshmallows for garnish (optional)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the graham cracker crumbs, cocoa powder, brown sugar, and granulated sugar. Mix well until combined.

    Incorporate Wet Ingredients: Pour in the melted butter and vanilla extract. Mix with a spatula until everything is moistened and forms a crumbly mixture.

      Add Dry Ingredients: Gradually stir in the all-purpose flour and salt until just combined. Do not overmix — a few lumps are okay!

        Fold in Chocolates and Marshmallows: Add the mini chocolate chips and mini marshmallows to the dough. Gently fold them in until evenly distributed throughout the mixture.

          Set in Pan: Line an 8x8 inch (or similar size) square baking dish with parchment paper, leaving some overhang for easy removal later. Transfer the cookie dough mixture into the lined dish and spread it evenly, pressing down firmly to ensure it’s compact.

            Chill: Cover the dish with plastic wrap and place it in the refrigerator for at least 1 hour to allow the cookie dough to firm up.

              Slice and Serve: Once set, remove the bars from the dish using the parchment overhang. Cut into squares or rectangles. For extra flair, sprinkle some additional graham cracker crumbs and chocolate chips on top, and/or add a few extra mini marshmallows.
