Ingredients

4 bone-in pork chops (about 1-inch thick)

1 cup all-purpose flour

2 teaspoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons butter

1 medium onion, thinly sliced

8 oz mushrooms, sliced (button or cremini)

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

2 teaspoons Worcestershire sauce

Fresh thyme or parsley for garnish

Instructions

Prepare the Pork Chops: In a shallow dish, combine flour, paprika, garlic powder, onion powder, salt, and pepper. Dredge each pork chop in the flour mixture, shaking off the excess.

Sear the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove the chops from the skillet and set aside.

Sauté Onions and Mushrooms: In the same skillet, add the butter. Once melted, add the sliced onions and mushrooms. Sauté for about 5-7 minutes until the onions are translucent and mushrooms are golden brown.

Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

Create the Gravy: Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Stir in the heavy cream and Worcestershire sauce, and bring to a gentle simmer.

Return Pork Chops: Place the seared pork chops back in the skillet, submerging them in the gravy. Cover and simmer on low heat for about 20-25 minutes, or until the pork chops are cooked through and tender.

Finish and Serve: Taste and adjust seasoning if needed. Garnish with fresh thyme or parsley. Serve the smothered pork chops over mashed potatoes, rice, or your favorite side.
