2 ¼ cups all-purpose flour

2 tsp ground ginger

1 tsp ground cinnamon

½ tsp ground cloves

½ tsp baking soda

½ tsp salt

¾ cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

¼ cup molasses

1 tsp vanilla extract

¼ cup granulated sugar (for rolling)

Optional: ½ cup chopped crystallized ginger for extra spice

Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, using an electric mixer, beat the softened butter and brown sugar together on medium speed until light and fluffy (about 3-4 minutes).

        Add Egg and Mocha: Add the egg, molasses, and vanilla extract to the butter mixture. Beat until well combined.

          Combine Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just incorporated. If desired, fold in the chopped crystallized ginger for an extra kick.

            Chill the Dough: Cover the dough with cling wrap and refrigerate for at least 30 minutes. This helps to firm up the dough for better shaping.
