Ingredients
  

1 cup creamy peanut butter

1 cup granulated sugar

1 cup packed brown sugar

1 large egg

2 teaspoons vanilla extract

2 teaspoons baking soda

½ teaspoon salt

2 ½ cups all-purpose flour

24 chocolate kisses, unwrapped

Additional granulated sugar for rolling

Instructions
 

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

    In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar until well blended.

      Beat in the egg and vanilla extract until the mixture is smooth and creamy.

        In a separate bowl, whisk together the baking soda, salt, and all-purpose flour until evenly mixed.

          Gradually add the dry ingredients to the peanut butter mixture, stirring until just combined. The dough will be thick.

            Roll the dough into 1-inch balls. Roll each ball in granulated sugar to coat before placing them on the prepared baking sheets, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.

                Remove the cookies from the oven, and immediately press a chocolate kiss into the center of each cookie. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
