Ingredients

1 cup unsalted butter, softened

1 cup cookie butter

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large bowl, cream together the softened butter, cookie butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.

In another bowl, whisk together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Fold in the chocolate chips until evenly distributed throughout the dough.

Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft (they will firm up as they cool).

Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Enjoy your deliciously soft and chewy cookie butter brown sugar cookies!
