1 pound lump crab meat, picked over for shell

1 cup all-purpose flour

2 large eggs

1/4 cup milk

1 teaspoon baking powder

1 tablespoon Old Bay seasoning

2 tablespoons chopped fresh parsley

1/4 cup finely chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil, for frying

Optional: Hot sauce and lemon wedges for serving

Instructions
 

Prepare the Batter: In a large mixing bowl, combine the flour, baking powder, Old Bay seasoning, garlic powder, salt, and black pepper.

    Mix Wet Ingredients: In another bowl, whisk together the eggs and milk until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

      Fold in Crab: Gently fold in the lump crab meat, chopped parsley, and green onions, being careful not to break up the crab too much.

        Heat Oil: In a deep skillet or pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).

          Fry the Beignets: Using a spoon or small scoop, drop spoonfuls of the crab mixture into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

            Drain and Serve: Using a slotted spoon, remove the beignets from the oil and drain on paper towels. Season lightly with additional salt if desired.

              Garnish: Serve hot with a side of hot sauce and lemon wedges for an extra kick.
