Ingredients

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Oil for frying (canola or vegetable oil)

8 small corn tortillas

1 cup shredded red cabbage

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Bang Bang Sauce:

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp Sriracha (or more for extra heat)

1 tsp lime juice

Salt to taste

Instructions

Prepare the Bang Bang Sauce: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, lime juice, and a pinch of salt. Adjust as necessary for desired heat and flavor. Set aside.

Marinate the Shrimp: In a shallow dish, soak the shrimp in buttermilk for at least 30 minutes. This will tenderize the shrimp and enhance the flavor.

Prepare the Breading: In another bowl, mix the flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper until well combined.

Bread the Shrimp: Remove the shrimp from the buttermilk, shaking off excess. Dredge each shrimp in the flour mixture, pressing lightly to adhere the breading. Place the breaded shrimp on a plate until ready to fry.

Fry the Shrimp: In a large skillet, heat about 1 inch of oil over medium-high heat. Once hot (about 350°F), carefully add the breaded shrimp in batches (don’t overcrowd the pan). Fry for 2-3 minutes on each side until golden brown and crispy. Remove and place on paper towels to drain excess oil.

Warm the Tortillas: In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, or until soft and pliable.

Assemble the Tacos: Start with a tortilla, add a layer of shredded cabbage, followed by a few pieces of crispy shrimp, avocado slices, and a drizzle of Bang Bang sauce. Top with fresh cilantro.

Serve: Squeeze fresh lime juice over the tacos and serve immediately with lime wedges on the side.
