Ingredients

2 cups cooked shredded chicken

1 cup BBQ sauce (spicy variety)

1 cup ranch dressing

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small red onion, thinly sliced

1 bell pepper (red or green), diced

1 jalapeño, seeds removed and finely chopped (optional for extra heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions

Preparation of Chicken Mixture: In a large bowl, combine the cooked shredded chicken, spicy BBQ sauce, ranch dressing, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix thoroughly until the chicken is well-coated.

Layering the Bake: Preheat your oven to 375°F (190°C). In a large baking dish, spread a thin layer of the chicken mixture on the bottom. Place one tortilla over the mixture, followed by another layer of the chicken mixture.

Add Vegetables: Sprinkle half of the sliced onions, diced bell peppers, and jalapeños over this layer. Then, add a generous handful of both cheddar and mozzarella cheese. Repeat the process with another tortilla, more chicken mixture, remaining veggies, and cheeses.

Final Layer: Finish off with the last tortilla on top. Spread the remaining chicken mixture over the final layer, and top it with a mix of leftover cheeses.

Baking: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Garnishing: Once baked, remove from the oven and let it sit for about 5 minutes. Sprinkle freshly chopped cilantro on top for garnish.

Serving: Cut into squares or wedges using a sharp knife. Serve warm with some extra BBQ sauce or ranch dressing on the side for dipping.
