Spicy Buffalo Cauliflower Bites

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for GF)

1 cup unsweetened almond milk (or regular milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon salt

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Celery sticks (for serving)

Blue cheese or ranch dressing (for dipping)

Instructions
 

Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the batter: In a large bowl, whisk together the flour, almond milk, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt until smooth. The batter should be thick enough to coat the cauliflower florets.

      Dip the cauliflower: Taking each cauliflower floret, dip it into the batter, allowing excess to drip off, then place it on the prepared baking sheet. Repeat with all florets.

        Bake the cauliflower: Bake in the preheated oven for 20-25 minutes or until the coating is crispy and golden brown.

          Prepare the buffalo sauce: While the cauliflower is baking, mix the buffalo sauce with olive oil in a large bowl until well combined.

            Coat the baked cauliflower: Once the cauliflower bites are done baking, carefully remove them from the oven and transfer them to the bowl with the buffalo sauce. Gently toss to ensure they are fully coated.

              Return to the oven: Place the buffalo-coated cauliflower bites back on the baking sheet and bake for an additional 10 minutes to set the sauce.

                Serve: Remove from the oven and let them cool for a minute. Garnish with chopped parsley and serve with celery sticks and your choice of blue cheese or ranch dressing for dipping.
