Spicy Chickpea Veggie Burgers

1 can (15 oz) chickpeas, drained and rinsed

1 cup cooked quinoa

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/2 cup grated carrots

1/4 cup finely chopped red onion

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp sriracha sauce (adjust to taste)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil (for cooking)

Burger buns (whole grain or your choice)

Toppings: sliced avocado, lettuce, tomato, and any additional sauces you prefer (hot sauce, tzatziki, etc.)

Instructions
 

Prepare Chickpeas: In a large bowl, mash the chickpeas using a fork or potato masher until mostly smooth, with some chunks remaining for texture.

    Mix Ingredients: Add the cooked quinoa, breadcrumbs, grated carrots, chopped red onion, minced garlic, grated ginger, sriracha, cumin, smoked paprika, cayenne, salt, and black pepper to the mashed chickpeas. Mix until well combined.

      Form Patties: With your hands, shape the mixture into 4-6 burger patties, depending on your preferred size. If the mixture is too wet, gradually add more breadcrumbs until the mixture holds together.

        Chill (Optional): For better texture, refrigerate the patties for 30 minutes to firm up. This step is optional but recommended.

          Cook Patties: Heat olive oil in a large skillet over medium heat. Add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.

            Assemble Burgers: Toast the burger buns lightly. Place each patty on a bun and top with sliced avocado, lettuce, tomato, and any other desired toppings or sauces.
