8 oz fettuccine or penne pasta

1 lb chicken breast, cut into bite-sized pieces

2 tbsp Cajun seasoning

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tsp smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes (for extra heat)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or penne according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.

    Season the Chicken: In a bowl, toss the chicken pieces with the Cajun seasoning until well-coated.

      Sauté Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the chopped onion and cook for about 2-3 minutes until translucent. Add the minced garlic, red and green bell peppers, and cook for an additional 3-4 minutes until the peppers are tender.

          Make the Sauce: Reduce the heat to medium, and pour in the heavy cream and chicken broth. Stir to combine, and let simmer for about 5 minutes. Incorporate the smoked paprika and Parmesan cheese, stirring until the cheese has melted and the sauce is creamy. Season with salt and pepper to taste.

            Combine Chicken and Pasta: Add the cooked chicken back into the skillet. Then, gradually mix in the cooked pasta, adding some reserved pasta water if necessary to reach desired consistency.
