Spicy Fish & Sweet Potato Cakes

1 pound white fish fillets (such as cod or tilapia)

1 medium sweet potato, peeled and cubed

1 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup green onions, finely chopped

1/4 cup fresh cilantro, chopped

1 small red chili, finely minced (adjust based on heat preference)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cumin

1 large egg, beaten

Salt and black pepper to taste

Olive oil (for frying)

Cook the Sweet Potato: In a medium pot, bring water to a boil. Add the cubed sweet potato and cook for about 10-15 minutes, or until tender. Drain and mash in a bowl. Set aside to cool.

    Prepare the Fish: In a large skillet, add a splash of olive oil over medium heat. Add the fish filets and cook for approximately 3-4 minutes on each side, or until cooked through and flaky. Remove from heat and let it cool before flaking it into bite-sized pieces.

      Combine Ingredients: In a large bowl, combine the cooled mashed sweet potato, flaked fish, breadcrumbs, green onions, cilantro, minced red chili, smoked paprika, garlic powder, cumin, and the beaten egg. Season with salt and pepper to taste. Mix everything together until well combined.

        Form the Cakes: Using your hands, shape the mixture into small patties (about 2-3 inches wide). Place them on a parchment-lined baking sheet, and refrigerate for about 30 minutes to firm up.
