2 cans (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

    Prep Chickpeas: Spread the drained chickpeas onto a clean kitchen towel or paper towels. Pat them dry thoroughly to ensure they roast properly without steaming.

      Mix Seasoning: In a large mixing bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper, onion powder, salt, and black pepper. Mix until well combined.

        Toss Chickpeas: Add the dried chickpeas to the bowl and toss until they are evenly coated with the spicy garlic oil mixture.

          Roast: Spread the chickpeas in an even layer on the prepared baking sheet. Roast in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even cooking, until they are golden and crispy.

            Add Cheese: Remove the chickpeas from the oven and sprinkle the grated Parmesan cheese over them. Return to the oven for an additional 5-10 minutes, or until the cheese is melted and slightly golden.
