1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

3 tablespoons gochujang (Korean red chili paste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons vegetable oil

1 teaspoon sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Cooked rice or lettuce leaves (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine gochujang, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. Mix until well blended. Add the chicken pieces to the bowl and toss until fully coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

    Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken pieces, allowing the excess marinade to drip off. Spread the chicken evenly in the skillet and sauté for about 5-7 minutes until the chicken is golden brown and cooked through, stirring occasionally to prevent sticking.

      Reduce the Sauce: Once the chicken is cooked, lower the heat to medium and let the remaining marinade in the skillet bubble and thicken for about 2-3 minutes, stirring frequently, until it coats the chicken nicely.

        Garnish and Serve: Remove from heat and transfer the chicken to a serving platter. Sprinkle with sesame seeds and sliced green onions. Serve hot alongside cooked rice or lettuce leaves for wrapping, allowing everyone to enjoy the flavor explosion!
