1.5 lbs boneless, skinless chicken thighs

3 tablespoons gochujang (Korean chili paste)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sesame oil

4 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon rice vinegar

1 teaspoon black pepper

1 tablespoon vegetable oil (for cooking)

1 tablespoon sesame seeds (for garnish)

3 green onions, finely chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine the gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Mix until smooth. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare for Cooking: Heat the vegetable oil in a large skillet or frying pan over medium-high heat. Once hot, add the marinated chicken thighs, allowing any excess marinade to drip off before placing them in the pan.

      Cook the Chicken: Sear the chicken thighs on one side for about 5-7 minutes until they develop a golden-brown crust. Flip and cook for another 5-7 minutes on the opposite side until the chicken is fully cooked through, reaching an internal temperature of 165°F (75°C).

        Glaze and Finish: If desired, pour any remaining marinade into the pan during the last few minutes of cooking for a delicious glaze. Cook until the sauce thickens slightly, ensuring it doesn't burn. Stir occasionally.
