Ingredients

1 large head of cauliflower, cut into florets

2 tablespoons vegetable oil

1 teaspoon sesame oil

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 tablespoon maple syrup or honey

1 teaspoon minced garlic

1 teaspoon grated ginger

1 tablespoon rice vinegar

1 tablespoon sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Make the Marinade: In a large bowl, combine the vegetable oil, sesame oil, gochujang, soy sauce, maple syrup, minced garlic, grated ginger, rice vinegar, and a pinch of salt and pepper. Whisk everything together until smooth.

Coat the Cauliflower: Add the cauliflower florets to the bowl with the marinade. Toss until all the florets are evenly coated with the spicy marinade.

Bake the Cauliflower: Spread the marinated cauliflower in a single layer on the prepared baking sheet. Bake in the preheated oven for about 25–30 minutes, turning halfway through, until the cauliflower is tender and caramelized.

Garnish and Serve: Once baked, remove the cauliflower from the oven and transfer it to a serving dish. Sprinkle with sesame seeds and sliced green onions for an added crunch and freshness.

Enjoy: Serve your Spicy Korean BBQ Cauliflower as a side dish, a main veggie dish, or toss it into a grain bowl for an extra kick!
