Spicy Mango Wraps

Ingredients
  

2 large whole wheat tortillas

1 ripe mango, diced

1 red bell pepper, sliced

1 avocado, sliced

1 cup cooked black beans (canned or homemade)

1/2 cup fresh cilantro, chopped

1/4 cup Greek yogurt or dairy-free yogurt

2 tablespoons lime juice

1 tablespoon honey or agave syrup

1-2 jalapeños, finely chopped (adjust based on heat preference)

Salt and pepper to taste

Olive oil for drizzling

Instructions
 

In a mixing bowl, combine the diced mango, sliced red bell pepper, and chopped cilantro. Mix well and set aside.

    In a separate small bowl, whisk together the Greek yogurt, lime juice, honey (or agave), and chopped jalapeños. Season with salt and pepper to taste. Adjust the spiciness by adding more jalapeños if desired.

      Heat a skillet over medium heat and lightly drizzle with olive oil. Briefly warm each tortilla for about 30 seconds on each side until pliable.

        Once warmed, lay a tortilla flat on a clean surface. Spread a generous spoonful of the yogurt sauce across the center of the tortilla.

          Layer on a portion of black beans, followed by the mango and bell pepper mixture, and slices of avocado.

            Carefully fold in the sides of the tortilla, then roll it up from the bottom, securing the filling.

              Repeat the process with the second tortilla.

                For an extra touch, you may slice the wraps in half diagonally and secure with toothpicks, or serve whole.

                  Drizzle with more of the yogurt sauce and enjoy fresh!
