1 medium onion, finely diced

4 cloves garlic, minced

1 cup pure maple syrup

1/2 cup brown sugar

1/4 cup apple cider vinegar

1-2 teaspoons crushed red pepper flakes (adjust to taste)

1 teaspoon freshly cracked black pepper

1 teaspoon smoked paprika

1 teaspoon Dijon mustard

1/2 teaspoon sea salt

A pinch of cayenne pepper (optional, for extra heat)

1/2 cup of water

Cook the Bacon: In a large skillet over medium heat, fry the chopped bacon until it is crispy and has rendered its fat. This should take about 8-10 minutes. Use a slotted spoon to transfer the bacon to a paper-towel-lined plate, leaving the rendered fat in the skillet.

    Sauté the Onion and Garlic: In the same skillet with the bacon fat, add the diced onion and sauté until translucent and lightly caramelized, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently until fragrant.

      Combine Ingredients: Reduce the heat to low and return the crispy bacon to the skillet. Pour in the maple syrup, brown sugar, apple cider vinegar, and all the spices (red pepper flakes, black pepper, smoked paprika, Dijon mustard, sea salt, and cayenne pepper if using). Stir well to combine.

        Simmer the Mixture: Gradually add the water into the mixture to help dissolve the sugars. Simmer on low heat, stirring occasionally, for about 30-35 minutes, or until the mixture thickens and becomes jam-like in consistency. If the jam thickens too much, add a little more water as needed.
