For the Spicy Pineapple BBQ Sauce:

1 cup pineapple juice

1/2 cup ketchup

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons apple cider vinegar

2 teaspoons Sriracha (or more to taste)

1 tablespoon minced ginger

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

For the Sliders:

1 pound pork shoulder, cut into chunks

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

12 slider buns

Fresh cilantro leaves for garnish

Sliced jalapeños (optional, for extra heat)

Pineapple rings for grilling (optional)

Instructions
 

Make the BBQ Sauce: In a medium saucepan, combine pineapple juice, ketchup, soy sauce, brown sugar, apple cider vinegar, Sriracha, ginger, garlic, smoked paprika, and a pinch of salt and pepper. Bring the mixture to a simmer over medium heat and let it cook for about 15 minutes until it thickens slightly. Stir occasionally. Remove from heat and set aside.

    Prepare the Pork: In a slow cooker or instant pot, add the pork shoulder pieces. Drizzle with olive oil, then season with salt and pepper. Pour half of the spicy pineapple BBQ sauce over the pork, reserving the other half for basting and serving.

      Cook the Pork: If using a slow cooker, cook on low for 6-8 hours, or until the pork is tender and easily shreds with a fork. If using an instant pot, seal the lid and cook on high pressure for 60 minutes, then allow for natural release.

        Shred the Pork: Once cooked, remove the pork from the cooker and shred it using two forks. Mix it back into the remaining sauce in the pot.

          Toast the Buns (Optional): If desired, grill or toast the slider buns on a pan for a minute or two until warm and slightly crispy.

            Assemble the Sliders: On the bottom half of each slider bun, pile a generous portion of the pulled pork mixture. Add a slice of grilled pineapple (if using) and top with fresh cilantro leaves. For those who like it extra spicy, add sliced jalapeños.

              Serve: Place the top half of the bun on each slider and serve warm with any remaining spicy pineapple BBQ sauce on the side for dipping.
