Ingredients

2 cups fresh blueberries (or frozen)

1 cup coconut water

1 tablespoon honey (or agave syrup for a vegan option)

1 tablespoon fresh lime juice

1 teaspoon chili powder (adjust based on spice preference)

1/2 teaspoon cayenne pepper (optional, for extra heat)

Zest of 1 lime

A pinch of salt

Instructions

Prepare the Blueberries: If using fresh blueberries, rinse them under cold water. If using frozen, let them thaw slightly at room temperature.

Blend: In a blender, combine the blueberries, coconut water, honey, fresh lime juice, chili powder, cayenne pepper (if using), lime zest, and a pinch of salt. Blend until smooth and well incorporated.

Taste and Adjust: Taste the mixture and adjust sweetness or spice as desired. If you’d like it sweeter, add a bit more honey. For added heat, sprinkle in more cayenne.

Pour into Molds: Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion during freezing.

Insert Sticks and Freeze: Place the popsicle sticks into the molds and freeze for about 4-6 hours, or until completely solid.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy immediately!
