Spicy Thai Peanut Noodles

8 oz rice noodles

1 cup unsweetened peanut butter

2 tbsp soy sauce

2 tbsp lime juice (freshly squeezed)

2 tbsp honey or maple syrup

1-2 tbsp sriracha (adjust for spice level)

1 garlic clove, minced

1 teaspoon fresh ginger, grated

1 small red bell pepper, thinly sliced

1 cup shredded carrots

1 cup snap peas or green beans, trimmed

¼ cup chopped green onions

¼ cup crushed peanuts (for garnish)

Fresh cilantro (for garnish)

Sesame oil (for drizzling)

Salt and pepper to taste

Instructions
 

Cook the Noodles: Boil a large pot of water, add the rice noodles, and cook according to the package instructions (usually 4-8 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, sriracha, minced garlic, and grated ginger until smooth. If the sauce is too thick, thin it out with a little warm water until you reach your desired consistency.

      Sauté the Veggies: In a large skillet or wok, heat a tablespoon of sesame oil over medium heat. Add the sliced bell pepper, shredded carrots, and snap peas (or green beans). Sauté for about 3-4 minutes until the vegetables are tender-crisp. Season with a pinch of salt and pepper.

        Combine: Add the cooked rice noodles to the skillet with the sautéed vegetables. Pour the peanut sauce over the noodles and toss everything together until well combined and evenly coated with the sauce. Cook for another 2-3 minutes, allowing the noodles to absorb the flavors.

          Serve: Divide the spicy peanut noodles into bowls. Top each serving with chopped green onions, crushed peanuts, and fresh cilantro. Drizzle a little extra sesame oil on top for added flavor.
