Spicy Thai Peanut Noodles – A Quick & Tasty Dinner!

Ingredients
  

8 oz rice noodles or udon noodles

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

1 medium carrot, julienned

3 green onions, chopped (white and green parts separated)

1/4 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons rice vinegar

2 tablespoons hoisin sauce

1 tablespoon sriracha (adjust to heat preference)

1 tablespoon sesame oil

1/4 cup unsalted peanuts, chopped (for garnish)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Noodles:

    - Bring a pot of water to a boil. Add the rice noodles or udon noodles and cook according to package instructions. Once done, drain and rinse under cold water to stop cooking. Set aside.

      Prepare the Sauce:

        - In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, hoisin sauce, sriracha, and sesame oil until smooth. Set aside.

          Sauté Vegetables:

            - In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

              - Add the sliced red bell pepper, snap peas, and julienned carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

                Combine Noodles and Sauce:

                  - Add the cooked noodles to the skillet along with the peanut sauce. Toss everything together to ensure the noodles and vegetables are well-coated and heated through, about 2-3 minutes.

                    Finish and Serve:

                      - Stir in the chopped green onion (white parts) just before removing from heat.

                        - Serve the noodles in bowls, garnishing with chopped peanuts, cilantro, and a squeeze of lime, and sprinkle the remaining green onion (green parts) on top.
