Spinach Artichoke Chicken Casserole

3 cups cooked chicken, shredded or diced

1 cup frozen spinach, thawed and drained

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup mayonnaise

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon salt

½ teaspoon crushed red pepper flakes (optional, for heat)

1 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (180°C).

    Prep the Casserole Mixture: In a large mixing bowl, combine the shredded chicken, thawed spinach, chopped artichokes, cream cheese, sour cream, mayonnaise, half of the mozzarella cheese, half of the Parmesan cheese, minced garlic, onion powder, garlic powder, black pepper, salt, and crushed red pepper flakes. Mix everything together until well combined and creamy.

      Transfer to Baking Dish: Spray a 9x13-inch baking dish with cooking spray. Pour the chicken mixture into the dish and spread it evenly.

        Prepare the Topping: In a small bowl, combine the remaining mozzarella cheese, remaining Parmesan cheese, and breadcrumbs. Mix together until well blended.

          Add the Topping: Evenly sprinkle the breadcrumb mixture over the top of the chicken mixture in the baking dish.

            Bake the Casserole: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly around the edges.

              Garnish and Serve: Remove from the oven and let it sit for about 5-10 minutes. Garnish with freshly chopped parsley before serving.
