Ingredients
  

1 cup orzo pasta

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (cremini or button)

1 small onion, diced

2 garlic cloves, minced

2 cups vegetable broth

½ cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and sliced mushrooms. Cook until the mushrooms are softened and golden, about 5-7 minutes.

      Add the orzo pasta to the saucepan and stir well to combine with the mushrooms and onions.

        Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the broth.

          Stir in the chopped spinach, heavy cream, and grated Parmesan cheese. Mix until the spinach wilts and everything is well combined. Season with salt and pepper to taste.

            Once incorporated, remove from heat and let it sit for a couple of minutes to thicken slightly.

              Serve warm, garnished with fresh parsley for a burst of color and flavor.
