Spinach Mushroom Pasta

8 oz (225 g) pasta (fettuccine or linguine)

2 tbsp olive oil

3 cloves garlic, minced

8 oz (225 g) mushrooms, sliced (cremini or button)

4 cups fresh spinach, roughly chopped

1/2 cup vegetable broth

1/2 cup heavy cream or coconut cream for a vegan option

1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)

1/4 tsp red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Garlic and Mushrooms: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced mushrooms and cook for 5-7 minutes, until they are soft and golden brown.

      Add Spinach: Stir in the chopped spinach and cook for another 2-3 minutes, until the spinach wilts down.

        Create the Sauce: Pour in the vegetable broth and let it simmer for about 2 minutes to reduce slightly. Stir in the heavy cream, allowing it to combine and heat through.

          Combine Pasta and Sauce: Add the cooked pasta into the skillet, tossing it with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired consistency.

            Finish with Flavor: Remove from heat and stir in the grated Parmesan cheese (or nutritional yeast), red pepper flakes (if using), and season with salt and black pepper to taste.
