Instructions

Marinate the Shrimp: In a bowl, combine olive oil, Sriracha, honey, lime juice, minced garlic, salt, and pepper. Add the shrimp and toss until well-coated. Let it marinate for about 15-20 minutes while you prepare the slaw.

Make the Slaw: In a large bowl, mix together the shredded green and purple cabbage, julienned carrot, and chopped cilantro. In a smaller bowl, whisk together lime juice, honey, and a pinch of salt. Pour the dressing over the slaw and toss to combine. Set aside.

Cook the Shrimp: Heat a non-stick skillet or grill over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side, or until they are pink and opaque.

Warm the Tortillas: While the shrimp is cooking, warm the tortillas in a separate skillet for about 30 seconds on each side, just until pliable.

Assemble the Tacos: Place a generous amount of slaw on each tortilla, followed by a portion of shrimp. Garnish with additional fresh cilantro and serve immediately with lime wedges on the side.
