16 oz (450g) fresh cremini mushrooms, cleaned and halved

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

1 tsp fresh rosemary, finely chopped (or 1/2 tsp dried rosemary)

1/2 tsp red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1 tbsp soy sauce (optional for umami depth)

2 tbsp fresh parsley, chopped, for garnish

Juice of 1/2 lemon

Heat the Pan: In a large skillet, melt 2 tablespoons of butter over medium-high heat until it starts to bubble but not brown.

    Cook the Mushrooms: Add the halved cremini mushrooms to the skillet in a single layer. Allow them to cook without stirring for about 3-4 minutes, until they get a nice golden sear.

      Flip and Sauté: Stir the mushrooms to cook the other side for another 3-4 minutes until browned and softened.

        Add Garlic and Herbs: Once the mushrooms are golden, push them to the sides of the skillet. Add the remaining 2 tablespoons of butter to the center, followed by the minced garlic, thyme, rosemary, and red pepper flakes (if using). Sauté for about 1 minute until the garlic is fragrant.

          Combine and Season: Stir everything together, ensuring the mushrooms are well coated with the garlic butter. Season with salt, black pepper, and drizzle in the soy sauce for an extra depth of flavor. Cook for another 2-3 minutes, stirring occasionally.
