For the Beef Marinade:

1 lb (450g) flank steak, thinly sliced against the grain

3 tablespoons soy sauce

2 tablespoons cornstarch

1 tablespoon rice wine or dry sherry

1 tablespoon sesame oil

For the Noodles:

8 oz (225g) egg noodles or rice noodles

2 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon ginger, minced

1 bell pepper, thinly sliced (any color)

1 cup snap peas or sugar snap peas

4 green onions, chopped

For the Sticky Sauce:

1/4 cup hoisin sauce

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon brown sugar

1 tablespoon rice vinegar

1 teaspoon Sriracha (optional for heat)

1 tablespoon water

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced flank steak, soy sauce, cornstarch, rice wine, and sesame oil. Mix well and let it marinate for at least 30 minutes while you prepare the other ingredients.

    Cook the Noodles: In a large pot of boiling water, cook the egg noodles or rice noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.

      Prepare the Sticky Sauce: In a small bowl, whisk together the hoisin sauce, soy sauce, oyster sauce, brown sugar, rice vinegar, Sriracha (if using), and water. Set aside.

        Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook for about 2-3 minutes until browned. Remove from the skillet and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the remaining oil. Add the minced garlic and ginger; sauté for 30 seconds until fragrant. Then add the sliced bell pepper and snap peas, stir-frying for about 3-4 minutes until they are vibrant and slightly tender.

            Combine Everything: Return the cooked beef to the skillet with the vegetables, and pour the sticky sauce over the mixture. Add the cooked noodles and toss everything together until well coated in the sauce. Cook for an additional 2-3 minutes to heat through.
