1 tablespoon olive oil

1 cup fresh pineapple, diced (or canned, drained)

1 red bell pepper, sliced

1 cup snap peas (or green beans)

3 green onions, sliced (white and green parts separated)

3 cloves garlic, minced

1-inch piece fresh ginger, grated

1/4 cup soy sauce (low sodium recommended)

1/4 cup teriyaki sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry for thickening)

Heat the Oil: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken pieces. Cook for about 5-7 minutes, or until browned all over and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the sliced red bell pepper and snap peas. Sauté for 2-3 minutes until they begin to soften. Then, add the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Prepare the Sauce: In a small bowl, whisk together the soy sauce, teriyaki sauce, honey, rice vinegar, and sesame oil. Pour this mixture into the skillet with the vegetables.

        Combine Everything: Return the cooked chicken to the skillet with the sauce and stir well to combine. Let it simmer for about 3-4 minutes, allowing the flavors to meld.
