1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons ghee or unsalted butter

1 medium onion, finely chopped

4 cloves garlic, minced

1 tablespoon ginger, grated

1 teaspoon garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric

1/2 teaspoon red chili powder (adjust to taste)

1 cup tomato puree

1/2 cup heavy cream

Salt, to taste

1 tablespoon sugar (optional, to cut acidity)

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan (for serving)

Instructions
 

Sauté Chicken: In a large skillet over medium heat, melt the ghee or butter. Add the chicken pieces and cook until browned (about 5-7 minutes). Remove the chicken from the skillet and set aside.

    Cook Aromatics: In the same skillet, add more ghee or butter if needed. Sauté the chopped onion until translucent (about 4 minutes). Add minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Spice it Up: Stir in garam masala, cumin, coriander, turmeric, and red chili powder. Cook the spices for about 30 seconds to bloom their flavors.

        Add Tomato Puree: Pour in the tomato puree, stirring well to combine. Let it simmer for about 5 minutes, allowing the sauce to thicken slightly.

          Finish the Sauce: Lower the heat, then add the heavy cream and stir until completely mixed. Add salt to taste and, if desired, the sugar to balance acidity.

            Combine Chicken and Sauce: Return the browned chicken to the skillet. Coat evenly with the sauce, and let it simmer for an additional 10 minutes, allowing the chicken to cook through and absorb the flavors.
