For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) instant yeast

1/2 teaspoon salt

1 cup whole milk, warmed

1/4 cup unsalted butter, melted

2 large eggs

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup strawberries, finely chopped

1 teaspoon lemon juice

For the Cinnamon Roll Filling:

1/2 cup brown sugar

2 tablespoons ground cinnamon

1/4 cup unsalted butter, softened

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Fresh strawberries, for garnish

Instructions

Prepare the Dough: In a large mixing bowl, combine the warm milk, melted butter, and granulated sugar. Sprinkle the yeast on top and let it sit for about 5 minutes until frothy.

Mix Dry Ingredients: In another bowl, whisk together the flour and salt. Gradually add the flour mixture to the yeast mixture, followed by the eggs. Mix until a dough forms.

Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

Make Cheesecake Filling: While the dough is rising, prepare the cheesecake filling. In a medium bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth. Stir in chopped strawberries and lemon juice. Set aside.

Prepare the Cinnamon Filling: In a small bowl, mix the brown sugar and ground cinnamon. Set aside.

Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 16x24 inches.

Assemble the Rolls: Spread the softened butter over the dough, then spread the cheesecake filling evenly on top. Sprinkle the cinnamon sugar mixture over the filling.

Roll and Cut: Starting from one long end, roll the dough tightly into a log. Cut the log into 12 equal slices and place them in a greased baking dish.

Final Rise: Cover the pan with plastic wrap and let the rolls rise in a warm place for another 30-45 minutes.

Preheat Oven: Preheat your oven to 350°F (175°C).

Bake: Once the rolls have puffed up, bake for 25-30 minutes or until golden brown.

Prepare the Glaze: While the rolls are baking, mix powdered sugar with milk and vanilla extract in a bowl until smooth.

Serve: After cooling for about 10 minutes, drizzle the glaze over the cinnamon rolls. Garnish with fresh strawberries and serve warm.

Prep Time: 20 minutes | Total Time: 2 hours | Servings: 12 rolls
