1 teaspoon baking powder

½ teaspoon baking soda

½ cup unsalted butter, softened

1 cup buttermilk

3 large eggs

1 tablespoon pure vanilla extract

Zest of 1 lemon

3 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract for the cream

Mint leaves for garnish (optional)

Preheat Your Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

        Add Wet Ingredients: Add in the buttermilk, eggs, vanilla extract, and lemon zest to the butter mixture. Mix well until combined.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing just until combined. Be careful not to overmix.

            Divide and Bake: Pour the batter equally into the prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

              Cool the Cakes: Once baked, remove the pans from the oven and let them cool in the pans for 10 minutes. Then, carefully turn them out onto wire racks to cool completely.
