Ingredients

2 cups fresh strawberries, hulled and diced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 cup crushed graham crackers (about 10 full sheets)

1/2 cup unsweetened coconut flakes

1/4 cup unsalted butter, melted

1 1/2 cups whipped cream or cool whip

1 teaspoon vanilla extract

Pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Strawberry Filling: In a medium bowl, combine the diced strawberries, granulated sugar, and lemon juice. Gently toss and let it sit for about 10-15 minutes to allow the strawberries to release their juices.

Make the Crunch Base: In a separate bowl, mix the crushed graham crackers, coconut flakes, and melted butter until well combined. Spread the mixture evenly into the bottom of a 9x9-inch baking dish and press it down firmly. Set aside.

Prepare the Whipped Layer: In a large bowl, fold the whipped cream with vanilla extract and a pinch of salt until it's fluffy and well combined.

Assemble the Layers: Spread the whipped cream mixture over the prepared crust in the baking dish, smoothing it out evenly. Then, spoon the macerated strawberries over the whipped cream layer, distributing them evenly.

Chill: Cover the dish with plastic wrap and refrigerate for at least 2 hours to set. This helps all the flavors meld together.

Serve: Once chilled, cut into squares or bars. Garnish with fresh mint leaves if desired for an extra touch of freshness.

Enjoy: Serve the Strawberry Crunch Bars chilled and enjoy a delightful combination of creamy, crunchy, and fruity goodness!
