1 cup fresh strawberries, hulled and sliced

2 tablespoons sugar

1 teaspoon lemon juice

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup crushed vanilla wafers (or graham crackers)

1/2 cup toasted coconut flakes (optional)

6 sugar cones

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a small bowl, combine the sliced strawberries, sugar, and lemon juice. Toss gently and let them sit for about 15-20 minutes until they release their juices.

    Make the Cheesecake Filling: In a medium mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated, being careful not to deflate the whipped cream.

        Prepare the Crunch Topping: In another bowl, combine the crushed vanilla wafers and toasted coconut flakes (if using). Mix well; this will be your crunch topping.

          Assemble the Cones: Take a sugar cone and fill it about halfway with the cheesecake filling. Layer a spoonful of the macerated strawberries on top. Then, add more cheesecake filling to fill the cone.

            Add the Crunch: Sprinkle the vanilla wafer topping generously over the cheesecake filling.

              Garnish and Serve: For an extra touch, you can garnish with a fresh mint leaf on top. Repeat with the remaining cones.

                Chill (Optional): For a firmer texture, place the assembled cones in the refrigerator for about 30 minutes before serving.
