Ingredients

2 cups frozen strawberries

1 cup coconut milk (full-fat for creamier texture)

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of salt

Fresh strawberries and mint leaves for garnish (optional)

Instructions

In a blender, combine the frozen strawberries, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt.

Blend on high speed until the mixture is smooth and creamy. You may need to stop and scrape down the sides to ensure everything is well combined.

Once blended to your desired consistency, taste and adjust sweetness if necessary by adding more honey or syrup.

To achieve a soft-serve texture, you can serve it immediately; for a firmer texture, transfer the mixture to an airtight container and freeze for about 30 minutes.

If frozen, let it sit at room temperature for a few minutes before scooping.

Serve in dessert bowls or cones, and garnish with fresh strawberries and mint leaves if desired.
