Strawberry Glazed French Crullers

Ingredients
  

1 cup water

1/2 cup unsalted butter, cubed

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

Vegetable oil, for frying

1 cup powdered sugar

2 tablespoons fresh strawberry puree

1 tablespoon milk

Fresh strawberries, for garnish (optional)

Instructions
 

In a saucepan, bring the water, butter, sugar, and salt to a boil over medium heat. Once boiling, quickly remove from heat and stir in the flour until combined and a dough forms.

    Return the saucepan to low heat and cook the dough for about 2 minutes, stirring continuously until it forms a ball and pulls away from the sides of the pan.

      Remove from the heat and let the dough cool slightly. Then, gradually beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth and glossy.

        Transfer the dough to a piping bag fitted with a star tip. Pipe 3-inch rings onto parchment paper squares.

          In a deep skillet, heat vegetable oil to 375°F (190°C). Carefully place the crullers into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side until golden brown.

            Using a slotted spoon, remove the crullers and place them on paper towels to drain excess oil.

              For the strawberry glaze, whisk together the powdered sugar, strawberry puree, and milk in a bowl until smooth and slightly thick.

                Dip the warm crullers into the strawberry glaze, allowing excess to drip off. Place them on a wire rack to let the glaze set.

                  (Optional) Top with fresh strawberries for an added touch before serving.
