Strawberry Glazed French Crullers

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon sugar

4 large eggs

1 teaspoon vanilla extract

Vegetable oil (for frying)

1 cup powdered sugar

1/4 cup fresh strawberries (pureed)

1 tablespoon milk

1/4 teaspoon almond extract (optional)

Instructions
 

Prepare the Choux Pastry: In a medium saucepan, combine water, butter, salt, and sugar. Bring to a boil over medium heat, stirring occasionally. Once boiling, add the flour all at once and stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan and forms a ball. Remove from heat.

    Incorporate Eggs: Let the dough cool for a couple of minutes. Add eggs, one at a time, mixing well after each addition until the dough is smooth and shiny. Stir in the vanilla extract.

      Form the Crullers: Scoop the dough into a piping bag fitted with a star tip. On a parchment-lined baking sheet, pipe 3-inch rings, forming a circle and spiraling the dough around itself for a beautiful shape. Chill them in the fridge for about 30 minutes.

        Heat the Oil: In a deep skillet or pot, pour enough vegetable oil to submerge the crullers (about 2 inches). Heat the oil to 350°F (175°C).

          Fry the Crullers: Carefully drop the crullers into the hot oil, a few at a time. Fry for about 3-4 minutes on each side, or until golden brown. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

            Make the Strawberry Glaze: In a mixing bowl, whisk together the powdered sugar, pureed strawberries, milk, and almond extract (if using) until smooth and thick.

              Glaze the Crullers: Once crullers are cool, dip the tops into the strawberry glaze. Allow the glaze to set for a few minutes on a wire rack.

                Serve: Enjoy the crullers warm or at room temperature, paired with a cup of coffee or tea!
