2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup shortbread cookies, crushed

1/4 cup cream cheese, softened

2 tablespoons lemon juice

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with 2 tablespoons of powdered sugar and lemon juice. Toss gently and set aside to macerate for about 20 minutes. This will enhance their sweetness and draw out their juices.

    Make the Cream Mixture: In a separate large bowl, beat the heavy whipping cream with the remaining powdered sugar and vanilla extract using an electric mixer until soft peaks form. Then, add the softened cream cheese and mix on low speed until well combined and smooth, but do not overmix.

      Layer the Ingredients: In serving dishes (individual glasses or a large trifle dish), start by adding a layer of crushed shortbread cookies at the bottom. Follow this with a layer of the macerated strawberries, spooning some of the juices over the cookies to soak them slightly.

        Add the Cream: Spoon a generous layer of the cream mixture over the strawberries. Repeat the layering process (cookies, strawberries, cream) until the glasses are filled. Finish with a final layer of cream on top.

          Chill & Serve: Cover the desserts with plastic wrap and refrigerate for at least 1 hour to let the flavors meld and the cream firm up slightly. Once ready to serve, garnish with fresh mint leaves for a pop of color and a refreshing touch.
