For the Shortcakes:

2 cups all-purpose flour

1/4 cup granulated sugar

2 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, cold and cubed

1 cup heavy cream

1 tsp vanilla extract

For the Strawberry Filling:

2 cups fresh strawberries, hulled and sliced

3 tbsp granulated sugar

1 tsp lemon juice

For the Ice Cream:

2 cups vanilla ice cream (store-bought or homemade)

Optional Toppings:

Whipped cream

Additional sliced strawberries

Mint leaves for garnish

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Let the mixture sit for about 30 minutes to macerate, allowing the strawberries to release their juices.

    Make the Shortcakes: Preheat your oven to 425°F (220°C). In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

      Add Wet Ingredients: Stir in the heavy cream and vanilla extract, mixing gently until just combined. Do not overwork the dough.

        Shape and Bake: Turn the dough onto a floured surface and pat it into a rectangle about 1-inch thick. Cut out rounds using a cookie cutter or a glass. Place the rounds on a parchment-lined baking sheet. Bake for 15-18 minutes or until golden brown. Let them cool completely.

          Assemble the Sandwiches: Once the shortcakes are cool, scoop about 1/4 cup of vanilla ice cream onto the flat side of one shortcake. Top with a spoonful of the macerated strawberries including some juice, then cap it with another shortcake, flat side down. Press gently to secure.

            Freeze to Firm Up: Place the assembled ice cream sandwiches on a baking sheet and freeze for at least 1 hour, allowing the ice cream to firm up.
