Ingredients

For the Shortcake:

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

3/4 cup heavy cream

1 teaspoon vanilla extract

For the Strawberries:

4 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

For the Whipped Cream:

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

Instructions

Prepare the Strawberries: In a bowl, combine the sliced strawberries with granulated sugar and lemon juice. Toss gently and let them sit for about 30 minutes to macerate.

Preheat the Skillet: Preheat your oven to 400°F (200°C). Place a large oven-safe skillet (10-12 inches) in the oven to heat while you prepare the shortcake batter.

Make the Shortcake Batter: In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix melted butter, heavy cream, and vanilla extract. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.

Prepare the Skillet: Once the skillet is hot, carefully remove it from the oven and grease it lightly with cooking spray or additional butter.

Bake the Shortcake: Pour the shortcake batter into the hot skillet and spread it evenly. Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

Make the Whipped Cream: While the shortcake bakes, whip the heavy cream with powdered sugar and vanilla extract in a chilled bowl until soft peaks form. Set aside.

Assemble the Shortcake: Once the shortcake is done, remove it from the oven and let it cool for a few minutes. Top the warm shortcake with the macerated strawberries, including any juice that has formed.

Serve: Cut the shortcake into wedges. Serve each slice warm, topped with a generous dollop of whipped cream. Enjoy your Strawberry Shortcake Skillet Delight!
