Ingredients
  

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

1 teaspoon vanilla extract

For the Strawberry Swirl:

2 cups fresh strawberries, hulled and halved

¼ cup sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 tablespoon water

For the Cheesecake Filling:

4 (8 oz) blocks cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

¼ cup heavy cream

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and vanilla extract. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

          Make the Strawberry Swirl:

            - In a medium saucepan, combine the strawberries, sugar, lemon juice, cornstarch, and water over medium heat.

              - Cook while stirring gently until the strawberries break down and the mixture thickens, about 5-7 minutes. Remove from heat and let cool.

                Prepare the Cheesecake Filling:

                  - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

                    - Add the sugar and vanilla extract, mixing until well incorporated.

                      - Add the eggs, one at a time, mixing on low speed after each addition to avoid over-mixing.

                        - Gently fold in the sour cream and heavy cream until smooth.

                          Assemble the Cheesecake:

                            - Pour half of the cheesecake filling over the cooled crust.

                              - Spoon half of the strawberry mixture on top of the filling, then use a knife or skewer to swirl it gently.

                                - Pour the remaining cheesecake filling over the top, and add the rest of the strawberry mixture, swirling again for a marbled effect.

                                  Bake the Cheesecake:

                                        Chill and Serve:

                                          - After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight.

                                            - Carefully remove the sides of the springform pan and slice into pieces.

                                              - Serve chilled, drizzled with remaining strawberry sauce if desired.
