6 mini bell peppers (any color)

4 oz cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 cup salami, chopped

1/4 cup black olives, sliced

1/4 cup roasted red peppers, chopped

2 tbsp fresh parsley, chopped

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 tbsp olive oil (for drizzling)

Optional: Freshly cracked black pepper and red pepper flakes for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Wash the mini bell peppers and slice them in half lengthwise. Remove the seeds and membranes to create boats for your stuffing.

      Make the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped salami, sliced olives, roasted red peppers, chopped parsley, garlic powder, onion powder, and a pinch of salt and pepper. Mix until all ingredients are well incorporated.

        Stuff the Peppers: Using a small spoon or a piping bag, generously fill each pepper half with the cheese and meat mixture.

          Arrange on a Baking Sheet: Place the stuffed peppers on a baking sheet lined with parchment paper. Drizzle the tops with a little olive oil for added flavor.

            Bake: Bake in the preheated oven for about 15-20 minutes, or until the peppers are tender and the filling is heated through and slightly golden.

              Garnish: Once out of the oven, let the stuffed peppers cool for a few minutes. If desired, sprinkle with freshly cracked black pepper and red pepper flakes for an added kick.

                Serve: Arrange the stuffed pepper halves on a charcuterie board alongside your favorite crackers, fruits, and nuts for a delightful presentation.
