For the Sugar Cookie Base:

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon almond extract (optional)

For the Cheesecake Layer:

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

2 tablespoons all-purpose flour

For the Topping:

½ cup colored sugar or sprinkles

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper for easy removal.

    Make the Sugar Cookie Base: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add in the egg and vanilla extract, mixing well. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients until combined.

      Spread the Base: Press two-thirds of the sugar cookie dough into the bottom of the prepared baking pan evenly. Reserve the remaining dough for topping later.

        Prepare the Cheesecake Layer: In a separate bowl, beat the softened cream cheese until smooth. Add granulated sugar and vanilla extract, blending until combined. Beat in the eggs, one at a time, mixing just until incorporated. Add the flour and mix to combine.

          Layering: Pour the cheesecake mixture over the sugar cookie base in the pan. Crumble the remaining sugar cookie dough over the cheesecake layer, spreading it out evenly.

            Add Sparkle: Sprinkle the colored sugar or sprinkles on top of the crumbled dough for an extra festive touch.

              Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the cheesecake layer is set and the edges are slightly golden.

                Cool: Remove from the oven and let it cool in the pan at room temperature for 30 minutes, then transfer to the fridge for at least 2 hours to chill completely.
